From the back and flanks of the black-haired pig, the pork back has a natural and intense flavour, with a smooth, well-defined surface. The marbling brings out the sweetness of the fat and the heaviness of the meat. A popular choice and one of the best values.
Pork Neck Lomito 40g
Also known as the loin, this is the tenderest and juiciest part of the black hairy pig. The main cut is between the shoulder blades and is the leanest and firmest muscle of the black hairy pig. The marbled fat melts in the mouth and is tender, giving it a rich, meaty flavour.
